Meringue Apple Cake

A delicious and delicate cake, prepared with simple ingredients and with very few flavors, apart from the flavors given by the ingredients themselves. This apple cinnamon flavored cake completely melt in your mouth.
This is a simple recipe, from a vintage book, which I used to prepare with great pleasure every autumn from fresh seasonal apples.
The aroma of sweet-sour apples, which blends harmoniously with cinnamon, spread on a tender biscuit base, combined with the meringue on top, make this cake melting in your mouth.
The apples used for this cake are preferably the Jonathan ones, which are sweet-sour apples, and no need to add sugar. If you want sweeter, you can add 2-3 teaspoons of sugar, as desired.
I highly recommend this cake. Besides the fact that it is a very simple, seasonal and delicate cake, its aroma is unforgettable.

Ingredients
For the Filling
8 -10 apples
2 Tbsp sugar (optional)
1 tsp cinnamon
 For the Biscuit
2 yolks
4 Tbsp sugar
4 Tbsp vegetable oil
4 Tbsp cream
4 Tbsp all purpose flour (plus 1 Tbsp if needed)
1 tsp baking soda
For the Meringue
3 egg whites (use the two from the yolk)
2 Tbsp sugar (plus one, if desired)
Method
Prepare the Apples
1. Peel, core and grate the apples. Using your hands or a sieve, squeeze out the juice. Sprinkle sugar over apples and stir to coat.
2. In a saucepan set over medium heat, add the apples. Sauté until apples are soft, about 2-3 minutes. Remove from the heat and add the cinnamon. Set aside.

3. Preheat the oven to 180°C (360°F). Grase and line a 20 x 30 cm rectangle pan with baking paper.
4. In a bowl cream the yolks with sugar until the mixture is pale yellow. Gradually, add the oil.
5. Meanwhile, in a small bowl, combine cream with backing soda. Add it to the yolks, and mix to combine. Gradually add the flour.
6. Turn the batter into the prepared pan. Bake until it starts to just turn golden, about 10-15 minutes.
Prepare the Meringue
7. Whip the egg whites until foamy. Gradually add the sugar, continuously whipping until it holds stiff peaks.
8. Remove the pan from the oven and spread the apple filling over the biscuit. Top with the meringue. Bake for another 15-20 minutes or until golden-brown. Let cool slightly at room temperature before serving.
