✔️ Mash the Bananas

Take four bananas and mash them well in a large mixing bowl. Keep the fifth banana aside to slice for topping later.

  • 5 large ripe bananas

Dry Ingredients

  • 250 g (2 cups) plain flour

  • 100 g (½ cup) packed brown sugar

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • Pinch of salt

Wet Ingredients

  • 60 ml (¼ cup) unsweetened almond milk or oat milk

  • 60 ml (¼ cup) vegetable oil

  • 1 tsp pure vanilla extract

Add-ins & Topping

  • 100 g (⅔ cup) vegan chocolate chips (Optional)

  • 1 tsp brown sugar, for topping



Method


  1. Preheat oven: Preheat your oven to 180°C (350°F). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal. Set aside.


  2. Mash bananas: Using a fork, mash 4 bananas until smooth. Keep the 5th banana aside to slice for topping later.


  3. Mix dry ingredients: In a bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.


  4. Combine wet and dry: Gradually fold in the mashed bananas and wet ingredients. Stir until just combined - avoid overmixing, as this can make the bread dense. If using, fold in the chocolate chips or chopped dark chocolate.


  5. Prepare for baking: Pour the batter into the prepared loaf pan. Slice the reserved 5th banana lengthwise and place it on top of the batter. Sprinkle 1 teaspoon of brown sugar over the banana for a caramelized finish.
