Vegan Banana Bread
There is nothing better than a Vegan Banana Bread that is moist, flavorful, and tastes just like traditional banana bread. It is fast, easy, and made with just a few simple ingredients. You can enjoy this simple and healthy Banana Bread recipe for breakfast, as a dessert, or as a quick snack.
The recipe uses oil instead of butter, banana puree and pieces of vegan chocolate, and it is finished off with a sliced banana over which brown sugar has been sprinkled, resulting in a brown sugar crust and caramelized banana. Quite simply, it's amazing!
Tips and Substitution to Make a Delicious Banana Bread
1. A riper banana makes the Banana Bread sweeter and more fragrant. Bananas that are very ripe contain a high level of sugar and starch.
2. A gluten free plain flour will work well in this vegan banana bread recipe.
3. Brown sugar can also be substituted with caster sugar, coconut sugar, or maple syrup.
4. For this recipe, I used unsweetened almond milk, but oat milk would also work fine.
5. Any neutral flavored oil is great: melted coconut oil, avocado oil etc.
6. It is not necessary to include cinnamon unless you like it.
7. As an alternative if you are unable to find vegan chocolate chips, you can chop up your favorite vegan chocolate into chunks and use that instead.
8. This dessert would be best with chocolate chips, but if you do not like them you can leave them out. As an alternative, walnuts and pecans could be used if you prefer some crunch

Ingredients
250 g (2 cups) plain flour
100 g (1/2 cup) light brown sugar, plus 1 tsp for topping
1 tsp baking powder
1 tsp cinnamon
pinch of salt
5 large ripe bananas, divided
55 g (1/4 cup) unsweetened almond milk (oat milk)
55 g (1/4 cup) vegetable oil
1 tsp pure vanilla extract
100 g chopped dark chocolate (or chocolate chips, vegan)
Method
1. Preheat oven to 180°C/160°C Fan ( 350°F / 4 gas mark). Line a loaf tin 23x13 cm (9x5 inch) with baking paper. Set aside.
2. In a bowl mix together flour, sugar, baking powder, cinnamon, and salt. Set aside.
3. Using a fork, mash 4 bananas. Add mashed bananas, almonds milk (oat milk), oil and vanilla extract to the flour mixture, and stir to combine - using a wooden spoon or a rubber spatula. Fold in the chocolate chips, just until combined, being careful not to over-mix.
4. Transfer the batter to the prepared loaf tin. Halve the remaining banana lengthwise and press into the top of the batter. Sprinkle the top with 1 teaspoon of brown sugar.
5. Bake for 50-55 minutes, until golden brown, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Allow to cool in the pan for few minutes, then transfer it onto a cutting board. Cool completely before slicing.
