Banana bread is a timeless classic, loved for its moist texture, comforting sweetness, and ability to use up overripe bananas in the most delicious way. But what if I told you that you could enjoy the same rich, tender crumb and incredible flavor—without using any eggs or dairy?

Mash the Bananas
Take four bananas and mash them well in a large mixing bowl. Keep the fifth banana aside to slice for topping later.

In a bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.
Mix Everything Together
Add the mashed bananas, almond milk, vegetable oil, and vanilla extract.

If using, fold in the vegan chocolate chips, nuts or crushed almonds.
Pour & Bake
Pour the batter into the prepared loaf pan.
Slice the reserved banana lengthwise and place it on top of the batter.
Sprinkle with 1 teaspoon of brown sugar for a caramelized topping; optional, sprinkle with nuts or crushed almonds
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
