Fluffy Strawberry Mousse

This Strawberry Mousse recipe is not only easy to prepare, but it's also incredibly light, creamy, and bursting with fresh berry flavor. Perfect for Summer!

When strawberries are in season, there's nothing quite like turning them into a dreamy, cloud-like mousse. This Fluffy Strawberry Mousse is one of my all-time favorite summer desserts: quick to make, wonderfully light, and incredibly satisfying.
The secret to this mousse is its beautiful texture: airy from whipped cream and egg whites, yet creamy enough to feel indulgent. Whether you're hosting a summer dinner party, preparing a romantic dessert, or simply treating yourself, this mousse will never disappoint.

Quick method suggestion:
Prepare the strawberries: Purée the sliced strawberries with lemon juice and 2 Tbsp of sugar. You can strain the purée if you want it very smooth.
Whip the cream: In a clean bowl, whip the cream with 1–2 Tbsp of sugar until soft peaks form. Chill.
Beat the egg whites: In another bowl, beat egg whites with remaining sugar (1–2 Tbsp) until stiff peaks form.
Combine: Gently fold the strawberry purée into the whipped cream, then carefully fold in the egg whites to keep it light.
Chill: Spoon into serving dishes and refrigerate for at least 2 hours.
One note of caution: Since you're using raw egg whites, make sure they're very fresh and preferably pasteurized to reduce any risk of foodborne illness.

Pro Tips for Perfect Mousse
Use ripe, flavorful strawberries: The better your berries, the better the mousse.
Cold cream whips better: Keep your whipping cream very cold for best results.
Gentle folding is key: This keeps the mousse light and fluffy.
Serve chilled: The mousse firms up beautifully in the fridge.

Variations
Gelatin version: If you want a firmer mousse that can hold its shape longer (good for cake layers or hot summer days), dissolve 1½ teaspoons of unflavored gelatin in 2 tablespoons of warm water and mix into the strawberry purée before folding.
Egg-free version: Replace the egg whites with an extra ½ cup of whipped cream for a simpler, egg-free mousse.
Make it boozy: Add a tablespoon of Grand Marnier, Chambord, or a splash of champagne to the strawberry purée for an adult twist.
