Ingredients
300g flour
3 Tbsp cocoa powder
120g sugar
1 tsp baking powder
4 Tbsp strawberry jam
1 tsp vanilla extract
80g pistachios or walnuts (optional), chopped
100g vegetable oil
250 ml sparkling mineral water
For the Glaze
4 Tbsp powdered sugar, sifted
2 Tbsp cocoa powder
2 Tbsp vegetable oil
1 tsp vanilla extract
2 1/2 Tbsp hot water
Method
1. Preheat the oven to 180°C/160°C Fun (350°F / 4 gas mark). Line a pan with parchment paper.
2. In a large bowl, stir together the flour, cocoa powder, sugar and baking powder. Add the jam, vanilla extract, pistachios, oil and sparkling mineral water; mix until well blended. Spread evenly in a prepared baking pan.
3. Bake for 25-30 minutes, until a toothpick inserted in the middle comes out clean. Allow to cool in the pan.
Prepare the Glaze
4. In a small bowl, add the powdered sugar, cocoa powder, oil, vanilla extract and hot water; stir well. Spread over brownie cake. Sprinkle with flaky almonds.
