
Best Vegan Brownies

This recipe for vegan brownies is excellent! You can make these chocolatey brownies without adding chocolate, eggs or dairy. They have a delicious taste that dairy-free vegans will love, but they are equally tasty for anyone who enjoys a delicious cake.
These brownies are soft, fluffy, light and tastes unbelievable with chocolate (cocoa) glaze.
Pistachios add crunch and buttery flavor to this recipe, but you can also use walnuts or hazelnuts. Additionally, you can add dried fruits like raisins, cranberries, apples, plums, or dried apricots.
Strawberry jam can also be substituted with any other jam of your choice.
Why sparkling water?
In addition to rising the composition, mineral water gives brownies a fluffy texture.

Ingredients
300g flour
3 Tbsp cocoa powder
120g sugar
1 tsp baking powder
4 Tbsp strawberry jam
1 tsp vanilla extract
80g pistachios, chopped
100g vegetable oil
250 ml sparkling mineral water
For the Glaze
4 Tbsp powdered sugar, sifted
2 Tbsp cocoa powder
2 Tbsp vegetable oil
1 tsp vanilla extract
2 1/2 Tbsp hot water
Method
1. Preheat the oven to 180°C/160°C Fun (350°F / 4 gas mark). Line a pan with parchment paper.
2. In a large bowl, stir together the flour, cocoa powder, sugar and baking powder. Add the jam, vanilla extract, pistachios, oil and sparkling mineral water; mix until well blended. Spread evenly in a prepared baking pan.
3. Bake for 25-30 min., until a toothpick inserted in the middle comes out clean. Allow to cool in the pan.
Prepare the Glaze
4. In a small bowl, add the powdered sugar, cocoa powder, oil, vanilla extract and hot water; stir well. Spread over brownie cake. Sprinkle with flaky almonds.
