How I Make the Lemon Posset


Here’s my simple method:


Heat heavy cream and sugar in a saucepan over medium heat. Stir occasionally until sugar dissolves and the mixture is just about to boil.


Remove from the heat and stir in freshly squeezed lemon juice (and zest if I’m feeling fancy). The cream thickens almost immediately.


Pour into small glasses or ramekins and let it cool slightly at room temperature before placing in the fridge.


Chill for at least 3 hours, or until set. Serve as is or garnish with fresh fruit for a pop of color.

Tips Before You Start
