Here’s how I usually make these cheesecake cups at home. It’s simple and fuss-free.
1. First, I make the crust. I mix graham cracker crumbs with melted butter and a little sugar, then press the mixture into the bottoms of small cups or jars. I pop them in the fridge while I get the filling ready.
2. For the filling, I beat the cream cheese and sugar until it’s smooth, then mix in the sour cream, vanilla, and a bit of lemon juice. I whip the heavy cream separately and gently fold it into the cream cheese mixture so it stays light and airy.
3. Once the filling is ready, I spoon or pipe it over the chilled crusts. I let the cups chill in the fridge for a couple of hours, or even overnight if I’m prepping ahead.

For the Crust:
100 g (1 cup) graham cracker crumbs or digestive biscuits, finely crushed
42 g (3 tbsp / 3/8 cup) unsalted butter, melted
12 g (1 tbsp) sugar
For the Filling:
226 g (1 cup / 8 oz) cream cheese, softened
120 g (1/2 cup) heavy cream, cold
60 g (1/4 cup) sour cream or Greek yogurt
67 g (1/3 cup) sugar
5 g (1 tsp) vanilla extract
5 g (1 tsp) lemon juice (optional)
For the Topping:
Fresh berries (strawberries, raspberries, blueberries, blackberries) —
1–2 cups mixed, as needed
Honey or berry sauce, for drizzling (optional)
Method
Prepare the crust: Mix the graham cracker crumbs, melted butter, and sugar until combined. Press about 2 tablespoons of the mixture into the bottom of each serving cup or jar. Chill while preparing the filling.
Make the filling: Beat the cream cheese and sugar until smooth. Add sour cream, vanilla, and lemon juice, mixing until well combined. In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream gently into the cream cheese mixture to keep it light and airy.
Assemble the cheesecake cups: Spoon or pipe the filling over the chilled crusts. Smooth the tops or leave with a natural swirl. Cover and refrigerate for at least 2–3 hours, or overnight if making ahead.
