This delicious Chocolate Mousse has a rich chocolate flavor and is light and airy with a velvety smooth texture.
100 ml (1/2 cup) half and half cream
400g (14 oz) bitter chocolate
2 Tbsp superfine sugar

1. Bring the cream to a boil. At the same time, melt the chocolate in a water bath. Add the cream to the melted chocolate and remove from heat.
2. Separate the egg whites and yolks, keeping just 2 yolks. Whisk the egg whites into stiff peaks with the sugar, combining the 2 yolks at the end.
3. Pour a quarter of the mixture into the chocolate and cream. Whisk. Add the rest of the egg whites and fold in carefully.
4. Pour the mousse into individual glasses and refrigerate for at least 2 hours before serving.
