Ingredients
3 large eggs
150 g (¾ cup) granulated sugar
150 g (⅔ cup) melted butter
A pinch of salt
200 g (1⅔ cups) plain/all-purpose flour
10 g (2 tsp) baking powder
100 ml (⅓ cup + 1 tbsp) milk
1 tsp vanilla extract (or seeds from 1 vanilla pod)
2–3 firm apples (such as Granny Smith, Honeycrisp or Fuji), sliced
50 g (½ cup) ground walnuts
1–2 tbsp brown sugar (optional, for topping)
Method
Preheat oven: Preheat the oven to 175°C (350°F). Line a loaf pan with baking paper or grease it with butter and dust it with flour to prevent sticking.
Prepare the Batter: In a large bowl, beat the eggs with a pinch of salt and the sugar until light and fluffy. Add the melted butter, milk, and vanilla extract, mixing well.
Combine dry ingredients: In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, stirring gently until a smooth batter forms.
Prepare the Apples: Peel and core the apples, then slice them thinly.
Assemble the Cake: Arrange a layer of apple slices over the batter. Sprinkle one tablespoon of ground walnuts over the apples, then spread a thin layer of batter. Repeat the layers: apples, walnuts, and batter, finishing with a final layer of batter. Optionally, sprinkle 1-2 tablespoons of brown sugar on top for extra caramelization.
Bake the Cake: Bake in the preheated oven for 45 minutes, or until a skewer inserted into the center comes out clean or with just a few moist crumbs.
Cool: Once baked, let the cake cool in the pan for 10-15 minutes, then carefully transfer it to a wire rack or plate to cool completely.
