This Apple, Walnut and Vanilla Loaf Cake is a recipe I always return to when I’m craving something simple and authentic. It’s not just a dessert, but a generous treat with a dense, moist texture, almost like a delicate pudding, that highlights the natural sweetness of seasonal fruit.

Imagine tender slices of apple tucked between layers of vanilla-scented batter, with just the right amount of walnut crunch. It’s rich without being heavy, rustic yet elegant, and honestly, this is one of my favorite cakes to bake.

Unlike light and airy sponge cakes, this loaf is dense and custardy in the best way. The apples release their juices while baking, giving the cake a moist, almost pudding-like middle, while the walnuts add just enough texture to make every bite interesting.

Paired with a cup of coffee or tea, it’s the ultimate cozy afternoon treat.

Why You’ll Love This Apple Walnut Vanilla Loaf

It’s full of apples. Instead of just tossing apples into the batter, this recipe layers them generously between the cake, so you taste the fruit in every bite.

It’s simple to make. No fancy techniques here: just mix, layer, and bake. Perfect for beginners or anyone who wants a stress-free recipe.

It’s moist and flavorful. The natural sweetness and juice of the apples keep the cake soft and rich, while the vanilla and walnuts add depth and warmth.

It’s versatile. Serve it plain for breakfast, dust it with powdered sugar for a simple dessert, or dress it up with ice cream or whipped cream when you’re feeling indulgent.

Tips for the Best Vanilla Apple Walnut Loaf Cake

✔️ Use ripe but firm apples – Soft apples can become too mushy in the batter. Good choices include Granny Smith, Honeycrisp, or Fuji.

✔️ Layering matters – Alternating the batter, apples, and walnuts ensures that every bite has the perfect balance of flavors and textures.

✔️ Let it cool properly – Allowing the cake to rest for 10-15 minutes before removing it from the pan helps it set properly.

✔️ For extra crunch, toast the walnuts before adding them to the batter. This enhances their flavor and makes them even more delicious.

Substitutions and Variations

✔️ No walnuts? Try pecans, almonds, or even hazelnuts.

✔️ No vanilla extract? Use the seeds from a vanilla bean or a splash of almond extract for a different but delicious twist.

✔️ Want a healthier version? Swap out half the flour for whole wheat flour and reduce the sugar slightly.

✔️ Dairy-free option – Use coconut oil instead of butter and almond or oat milk instead of dairy milk.

✔️ Love cinnamon? Sprinkle a little cinnamon over the apples for a warm, spiced flavor.

Recipe

A soft and moist apple walnut vanilla loaf cake made with fresh apples, warm vanilla, and crunchy walnuts.

Serving: 24

Calories: 285 kcal

Prep Time: 15 min Baking Time: 12 min

Cooling Time: 15 min Total Time: 45 min

Ingredients

  • 3 large eggs

  • 150 g (¾ cup) granulated sugar

  • 150 g (⅔ cup) melted butter

  • A pinch of salt

  • 200 g (1⅔ cups) plain/all-purpose flour

  • 10 g (2 tsp) baking powder

  • 100 ml (⅓ cup + 1 tbsp) milk

  • 1 tsp vanilla extract (or seeds from 1 vanilla pod)

  • 2–3 firm apples (such as Granny Smith, Honeycrisp or Fuji), sliced

  • 50 g (½ cup) ground walnuts

  • 1–2 tbsp brown sugar (optional, for topping)

Method

  1. Preheat oven: Preheat the oven to 175°C (350°F). Line a loaf pan with baking paper or grease it with butter and dust it with flour to prevent sticking.

  2. Prepare the Batter: In a large bowl, beat the eggs with a pinch of salt and the sugar until light and fluffy. Add the melted butter, milk, and vanilla extract, mixing well.

  3. Combine dry ingredients: In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, stirring gently until a smooth batter forms.

  4. Prepare the Apples: Peel and core the apples, then slice them thinly.

  5. Assemble the Cake: Arrange a layer of apple slices over the batter. Sprinkle one tablespoon of ground walnuts over the apples, then spread a thin layer of batter. Repeat the layers: apples, walnuts, and batter, finishing with a final layer of batter. Optionally, sprinkle 1-2 tablespoons of brown sugar on top for extra caramelization.

  6. Bake the Cake: Bake in the preheated oven for 45 minutes, or until a skewer inserted into the center comes out clean or with just a few moist crumbs.

  7. Cool: Once baked, let the cake cool in the pan for 10-15 minutes, then carefully transfer it to a wire rack or plate to cool completely.

  8. Serving: Slice and serve. Enjoy it plain or with a scoop of ice cream or a dollop of whipped cream for extra indulgence.

 Enjoy!

   N0tes

1. For best results, use firm apples that hold their shape during baking.

2. Store covered at room temperature for up to 3 days or refrigerate for up to 5 days.

3. Can substitute walnuts for pecans or almonds if preferred.
