Pumpkin pie is a true classic, particularly loved around Thanksgiving, in North America, when it traditionally finds its place on the table alongside family favourites and comforting seasonal dishes.

What I love about this pie is its connection to the season. Every time autumn arrives, with its crisp days, stunning foliage, and bountiful harvest, my mind immediately turns to a good pumpkin tart. For me and my family, this dessert captures the very spirit of the season.

Although pumpkin pie has become a symbol of American and Canadian autumn cooking, its story reaches back much further, to the early history of pumpkin as an important food in North America. Over generations, the recipe evolved into the classic pie we know today.

A Few Tips Before You Start


Make your own crust if you can: A homemade pie crust is worth it. It is not complicated, and the flaky, buttery texture makes a big difference. I use a simple flaky crust recipe that never lets me down. Store-bought works too, but if you have the time, give homemade a try.


No blind baking needed: Unlike some pies, this one does not need the crust baked ahead of time. The filling takes long enough in the oven that the crust cooks perfectly without any extra steps.

The pie is ready when the edges look firm and the middle still has a little wobble. It will finish setting as it cools. Try not to overbake or you might see cracks on top.

✔ Line the crust with parchment paper and add pie weights, dried beans, or rice.

✔ Bake until it turns lightly golden.

Pumpkin Purée: Homemade Makes a Difference


You can absolutely use canned pumpkin purée if you want to keep things easy, and it works well. But honestly, making your own pumpkin purée is worth it. It has a fresher, richer flavor and a smoother texture that really makes the pie taste homemade.


All you have to do is roast a pumpkin until it’s tender, scoop out the flesh, and blend it until smooth. If it looks a little watery, just drain the extra liquid before using it in your pie.


The difference is subtle but noticeable: your pie will taste brighter, more flavorful, and just a little extra special.

How to Substitute Condensed Milk


Condensed milk is sweet and thick, giving your tart a rich, creamy texture. If you don’t have it on hand, here are some easy alternatives:

Milk + sugar: 240 ml whole milk + 60 g sugar. Warm gently until the sugar dissolves, then let it cool.

Heavy cream + sugar: 240 ml heavy cream + 2–3 tablespoons powdered sugar. Mix well and use just like condensed milk.

Homemade condensed milk: 240 ml whole milk + 60 g sugar, simmered gently over low heat until it thickens to the consistency you want (about 15–20 minutes).

Prepare the Crust:

✔ Here’s the recipe to help you get started!



Prepare the filling

✔ Whisk together the eggs, pumpkin purée, and evaporated milk until well combined.



✔ Then, mix into the dry ingredients: sugars, flour, salt, and spices.



Prepare the Tart Pan

✔ Roll out the pie crust and carefully place it into your tart pan.

✔ Gently press it with your fingers so it fits snugly along the sides and bottom.

✔ Trim any excess dough from the edges for a neat finish.



Bake the Pie

Pour the filling into the unbaked pie crust.

✔ Bake the pie at 200°C (400°F) for 15 minutes.

✔ Then, reduce the temperature to 180°C (350°F) and bake for an additional 40-45 minutes.

Traditional Pumpkin Pie

Ingredients


For the pastry

  • 225 g shortcrust pastry or homemade flaky pastry

For the pumpkin filling

  • 1¾ cups (425 g) pumpkin purée

  • 3 large eggs

  • ½ cup (106 g) brown sugar

  • ½ cup (95 g) caster sugar

  • ¼ tsp salt

  • 1 tsp ground cinnamon

  • 1 tsp ground ginger

  • ½ tsp ground nutmeg

  • ⅛ tsp ground cloves

  • 1 tbsp plain flour

  • 1¼ cups (283 g) evaporated milk

To serve

  • lightly whipped cream

  • a little cinnamon

  • optional maple syrup



Method


Prepare the pastry: 

  1. Roll out the pastry on a lightly floured surface until it is about 5 cm larger than your 23 cm pie dish. Carefully transfer it to the dish, gently pressing it into the base and sides without stretching the pastry.


  2. Trim any excess around the edges and crimp or flute the pastry as desired. Place the pastry-lined dish in the refrigerator while you prepare the filling.


    Prepare the spice mixture: 

  3. In a medium bowl, whisk together the brown sugar, caster sugar, plain flour, salt, cinnamon, ginger, nutmeg and cloves. This helps distribute the spices evenly throughout the filling.


    Make the pumpkin filling: 

  4. In a large bowl, whisk the eggs until lightly beaten. Add the pumpkin purée and evaporated milk, then whisk until smooth and well combined. Gradually whisk in the sugar and spice mixture until you have a smooth, evenly blended filling.


    Fill the pastry: 

  5. Remove the pastry from the refrigerator and pour the pumpkin filling into the chilled, unbaked pastry shell. If necessary, gently smooth the surface.


    Bake: 

  6. Preheat the oven to 200°C (400°F). Bake the pie for 15 minutes, then reduce the temperature to 180°C (350°F) and continue baking for 40–45 minutes.


    Check for doneness: 

  7. The edges of the filling should be set, while the centre should still have a slight wobble when the dish is gently moved. Do not wait for the centre to become completely firm, as the filling will continue to set as the pie cools. Avoid overbaking, as this can cause cracks to form on the surface.


    Cool completely: 

  8. Remove the pie from the oven and place it on a wire rack. Allow it to cool completely before slicing. This gives the pumpkin filling time to finish setting and helps you achieve clean, neat slices.


    Serve: 

  9. Serve the pie at room temperature or chilled, with lightly whipped cream and a little cinnamon. For an extra touch, drizzle with a little maple syrup just before serving.
