3 large sweet potatoes, peeled and cut into pieces
2-3 tablespoons olive oil
3/4 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1 teaspoon garlic powder or 1/2 teaspoon garlic, minced
1. Preheat oven to 210°C (420°F). Line a large baking tray with parchment paper. Set aside.
2. Peel and cut in cubes, the sweet potatoes. Place them into a large bowl. Add oil, salt, pepper, paprika, cumin and garlic on top. Toss to coat all the sweet potatoes.
3. Spread them into the prepared baking tray, to arrange in an even layer. Roast until tender, tossing halfway trough, 30-35 minutes.
