Fresh, healthy, fast and filing, this salad makes a great supper or snack!

Ingredients;
Serves 2
2 mangoes, sliced
2 avocados, sliced
8 cherry tomatoes, cut in half or 2 other variety of tomatoes
1/2 small red onion, finely sliced
lettuce leaves (optional)
salt and freshly ground black pepper
For the Dressing
2 Tbsp olive oil
1 Tbsp white whine vinegar
1 tsp citron juice
1 garlic clove
2 tsp coriander, fresh leaves

Method
1. Make the dressing by combining all the ingredients in a small bowl; whisk well.
2. Toss the mangoes, avocado, tomatoes and onion in a serving bowl.
3. Lightly season with salt and pepper, then toss with the dressing.
4. Serve with lettuce leaves.
