Easy step-by-step recipe: How to make Strawberry & Feta Salad


Step 1: Prepare the ingredients

Start by washing the strawberries thoroughly, removing the stems, and cutting them in half (or into quarters if they are larger).

Cut the feta cheese into even cubes. Peel the red onion and slice it very thinly into julienne.



Step 2: The flavour secret – marinating the feta cheese

Wash the lemon well, finely grate the zest, then squeeze out the juice.

Place the feta cubes in a medium bowl. Add the lemon zest and half of the lemon juice, then drizzle with 1 tablespoon of olive oil.

Season with freshly ground black pepper and gently mix, being careful not to break the cubes. Set aside to marinate while you prepare the rest.



Step 3: The perfect dressing

In a small bowl, combine the remaining olive oil (2 tablespoons), Dijon mustard, and the rest of the lemon juice.

  • 600g strawberries, sliced

  • 200g feta cheese, cubed

  • 1 red onion, finely sliced

  • 3 tbsp olive oil

  • 1 lemon (zest and juice), unwaxed

  • 1 tsp Dijon mustard

  • Fresh mint leaves, finely chopped

  • Fresh parsley, finely chopped



Method


Prepare the ingredients

  1. Wash the strawberries, remove the stems, and slice them into halves or quarters depending on size. Thinly slice the red onion into fine strips. Cube the feta cheese and finely chop the mint and parsley.
