This tangy, crunchy salad is a healthy twist on a classic lunch recipe, is the perfect accompaniment to a buffet of cold cuts or perfect as a side dish.

What is Celeriac?
Celeriac is a root vegetable closely related to celery, This vegetable is crunchy, like a carrot, with a subtle celery flavour , less-watery which goes well with the sweetness of carrots.
Why Greek Yoghurt?
Greek yoghurt is an excellent source of calcium, contains probiotics, which support a healthy bacterial balance in the gut.
The difference between the regular yoghurt and Greek yoghurt is that the latest is a thicker, creamier yoghurt with twice the protein content. Greek yoghurt is strained three times, so most of the liquid is removed.

Ingredients;
Serves 6-8
Prep Time: 20 min
1 mid-sized celeriac (celery root), (300g; 10-oz) peeled and grated
1 large carrot, (300g; 10-oz) peeled and grated
2 apples, peeled and grated
100g (4-oz) walnuts
1 chicken breast, cooked and chopped
150-200g Greek yoghurt
lemon juice, freshly-squeezed, from 1 lemon
salt and pepper
To Serve:
red onion, celery leaves, fresh parsley, avocado




Method
1. In a large bowl, whisk together grated celeriac, grated carrots, grated apples, nuts and cooked chicken. Stir in lemon juice, salt and pepper. Add yoghurt. Stir to combine.
TO SERVE:
Greek yogurt chicken salad is a great meal lunch idea. You can serve on a piece of toast, in a tortilla with lettuce or with chips or crackers.
