This Parfait is great with lemon, cream cheese and fresh mint!
360g (3 cups) mixed fresh strawberries and raspberries or blueberries, blackberries
2 Tbsp vanilla sugar
60g (1/2 cup) cream cheese, softened
80g (1/2 cup) powdered sugar
2 Tbsp lemon juice (1/2 lemon)
1 tsp lemon peel, finely grated
2 tsp fresh mint, finely chopped
1. In a large bowl place all of the fruits. Add the vanilla sugar, Gently mix to coat and refrigerate.
2. In a mixing bowl, cream together the cream cheese and powdered sugar on low until smooth. Add the lemon juice, lemon peel and mint. Mix on medium for few seconds. Scoop into a pastry bag if desired.
3. Line up 4 parfait or stemmed wine glasses. Layer fruit and lemon cream alternatively.
