Appreciated as an aperitif or as a starter this preparation of prawns with lemon is very easy to realize and is always a hit.
40 (2 pounds) large shrimp
50g (2 oz) fresh parsley, chopped
1/2 cup extra-virgin olive oil
4 lemons, cut into wedges
1 tsp coarse salt
1/4 tsp freshly ground pepper
1. In a large bowl combine parsley, olive oil, salt and fresh ground pepper. Set aside.
2. Peel prawns and rinse. Place them in bowl with parsley-oil mixture, and coat.
3. Thread 4 prawns onto 8 wood skewers, alternating with lemon wedges. Gently brush with a little of the olive oil remaining in the bowl.
4. Arrange skewers, on a medium-hot grill and cook about 6 minutes, depending on heat of grill.
