The Fettuccine garlic cherry tomato sauce recipe is very light, the most delicious and easy to make. Combined with the flavor of garlic, the succulent sweet cherry tomatoes burst into a luxuriously silky sauce within minutes.
This delicately flavoured pasta is a very speedy and ideal option as a low-fat dinner or lunch for a busy week.
Prep. Time: 25 min
350g (1 package) Fettuccine pasta or other long pasta
3 tablespoons olive oil
6 garlic cloves, minced
400g cherry tomatoes, cut in half
1/2 cups vegetable or chicken stock
2/3 cups pitted black olives, cut in half
salt and black pepper
grated Parmesan cheese
1. In a large pot, boil a salted water and cook the pasta al dente according to package directions. Drain and rinse thoroughly under cold water. Set aside.
2. In a large skillet, heat the olive oil and saute the garlic, until it begins to soften and turn light golden. Add the cherry tomatoes and then continue cooking for around 2 minutes, stirring occasionally. Stir in the chicken stock, dried thyme, salt and pepper. Simmer for 3-4 minutes or until the tomatoes are soft.
3. Add the pasta and black olives, and toss to combine. Serve with Parmesan cheese, fresh thyme and slices of garlic bread.
