This delicately flavored pasta is a very speedy and ideal option as a low-fat main course.
package of fettuccine or other long pasta (350 g)
3 tablespoons olive oil
6 garlic cloves, minced very fine
400g cherry tomatoes, cut in half
1/2 cups vegetable or chicken stock
2/3 cups pitted black olives, cut in half
1 teaspoons dried thyme,
salt and black pepper grated Parmesan cheese
1. Cook the fettuccine in a large pan of boiling, salted water, according to the package instructions, until al dente. Drain and rinse thoroughly under cold water.
2. Prepare Garlic Bread
3. In a large saucepan heat 2 tablespoons olive oil and add the garlic, cherry tomatoes and cook for 2 minutes.
4. Add the chicken stock, salt and pepper and simmer for 3-4 minutes or until the tomatoes is soft.
5. Add the fettuccine and the black olives. Mix to coat all the ingredients and simmer for 3 minutes. Serve with Parmesan cheese and slices of french bread
