Creamy Tortellini Soup

This recipe uses Alfredo sauce, which is a popular sauce generally used for Italian pasta, being a white, dense sauce with a rich aroma.
Using butter, double cream, and grated Parmesan cheese, this sauce is ready in a few minutes. The recipe can be found here:

Ingredients
1Â package (350g) cheese tortelliniÂ
4 cups (1 Litre) chicken or vegetable stockÂ
3/4 cup Alfredo Sauce
200g cooked chicken, shredded
freshly ground white pepper
220g dried tomatoes packed in oil; drained and cut into strips
450g baby spinach
grated Parmesan cheeseÂ
Method
​​ 1. Cook the tortellini in a large pan of boiling salted water for 8 -10 minute, until tender. Drain and rinse thoroughly under cold water. Set aside.
2. In a large heavy saucepan, mix the chicken (vegetable) stock and Alfredo sauce; add the cooked chicken, dried tomatoes and pepper. Bring to a boil, then lower the heat and simmer for 5 minutes.
​3. Add the cooked tortellini and spinach; simmer for 2 minutes or until the spinach is soft. Serve with grated Parmesan cheese.
