This fragrant and aromatic soup, just right for a dinner party. A soup rich with Alfredo sauce and intensely flavored with dried tomatoes and spinach.
1 package (350g) cheese tortellini
3 cups chicken stock
3/4 cups Alfredo Sauce
200g cooked chicken, shredded
220g dried tomatoes packed in oil; drained and cut into strips
450g spinach leaves
grated Parmesan cheese
1. Cook the tortellini in a large pan of boiling salted water for 8 -10 minute, until tender. Drain and rinse thoroughly under cold water.
2. In a large heavy saucepan, mix the chicken stock and Alfredo sauce, Add the cooked chicken, dried tomatoes and pepper. Bring to a boil, then lower the heat and simmer for 5 minutes.
3. Add the cooked tortellini and spinach; simmer for 2 minutes or until the spinach is soft.
If desired, serve with Parmesan cheese.
