Vegetable-Pasta Soup with Herbs

The wide variety of fresh vegetables available nowadays allows the freshest ingredients to be used to create tempting and delicious homemade soups.

Serves 4

  • 2 tsp olive oil

  • 1 onion chopped

  • 2 carrots chopped (aprox. 150 g)

  • 2 celery stalk, diced

  • 1 potato, peeled and diced

  • 900 ml vegetable or chicken stock

  • 150 ml skim milk

  • 1/2 cup pasta - preferably hommemade

  • 1-2 tsp mixture of fresh and dried herbs such as parsley, and oregano

  • 2 tbsp of yogurt to accompany

  • salt and black pepper



1. Heat 2 tsp olive oil into a saucepan, put the onion, celery,, potato and carrot. Sauté over low heat for few minutes stirring frequently.

2. Add the vegetable or chicken stock. Cover and simmer for 20 minutes, until tender.

​​3. Add the milk, pasta and the mixture of fresh and dried herbs. Season with salt and black pepper. Simmer for 10 minutes.

​4. Divide the soup into warm bowls, decorated with 1 tablespoon of yogurt and chopped herbs.
