Vegetable Minestrone
The most delicious traditional Italian peasant, minestrone is a perfect soup to end the week. Add noodles for a light and healthy meal.
Ingredients
Serves 4
1 tsp olive oil
1 onion, chopped
750 ml chicken stock
350 ml water
1 box (540 ml) white beans, drained and rinsed
1 zucchini, coarsely chopped
2 carrots, chopped
3 garlic cloves, finely minced
​540 ml tomatoes, diced
1 cup macaroni
​3 cups spinach leaves
1 Tbsp oregano, fresh​​​​​​​​​​​, finely minced or 1 tsp oregano dried
salt and black pepper
Method
​​1. Heat the olive oil into a saucepan, over medium heat. Add the onion and cook for 5 minutes or until tender, stirring frequently.
2. Add the chicken stock, water, beans, zucchini, tomatoes, carrots and the garlic. Cover and simmer for 20 minutes, until tender.​​
​3. Add the macaroni. Cover and simmer for 5 minutes.
​4. Add the spinach and simmer for 3 minutes or until the macaroni are tender. Add the oregano, salt and pepper.
