The Secret to the Perfect Texture: Silky Béchamel and Golden Sautéed Mushrooms
The combination of sautéed mushrooms and creamy béchamel is what gives these pastry puffs their rich flavour and wonderfully satisfying texture. Cooking the mushrooms in butter brings out their deep, earthy flavour while allowing their excess moisture to evaporate, helping the puff pastry stay beautifully crisp once baked.
Folded into a smooth, velvety béchamel, delicately seasoned with a hint of nutmeg, the mushrooms create a filling that's rich, creamy and full of flavour. The elegant shape of these pastry puffs leaves the prosciutto and golden, melted cheese slightly exposed, giving them a beautifully rustic yet refined appearance that's just as inviting as they are delicious.

Tips for Perfect Puff Pastry Appetizers
Keep the Puff Pastry Chilled: Cold puff pastry is much easier to handle and bakes up beautifully crisp and flaky. If it becomes too soft while you're working, return it to the refrigerator for 10–15 minutes before continuing.
Cook the Mushrooms Until Dry: Let the mushrooms cook until all their moisture has evaporated and they're lightly golden. This concentrates their flavour and helps prevent the pastry from becoming soggy.
Don't Overfill the Pastries: A generous spoonful of filling is enough. Overfilling can make the pastries difficult to fold and may cause the filling to leak during baking.
Bake in a Fully Preheated Oven: Puff pastry relies on a hot oven to rise properly. Always bake in a fully preheated oven to achieve a crisp, golden, evenly baked finish.
Brush with Egg Wash: A light coating of beaten egg gives the pastry a rich golden colour and an irresistible glossy finish.
Let Them Rest for a Few Minutes: Allow the pastries to cool for 5 minutes before serving. This gives the filling time to set slightly while keeping the pastry crisp and flaky.
How to Make These Crispy, Creamy Pastry Puffs
1. Prepare the Baking Trays
Line two baking trays with parchment paper to prevent the pastry puffs from sticking and to ensure they bake evenly.

2. Make the Béchamel Sauce
✔ In a small saucepan, melt the butter over medium heat until fully melted and just beginning to foam. Remove from the heat, add the flour, and whisk vigorously until you have a smooth paste with no lumps.

✔ Gradually pour in the milk, whisking continuously to keep the sauce silky and smooth. Return the saucepan to low heat and cook gently, stirring occasionally, until the sauce thickens. Remove from the heat, season with salt, black pepper, and a pinch of nutmeg, then set aside to cool slightly.

3. Cook the Mushrooms
✔ Melt the butter in a large frying pan over medium heat. Add the sliced mushrooms and cook until they have released all their moisture and become beautifully golden. Remove from the heat and stir in the freshly chopped parsley.

4. Shape the Puff Pastry
✔ Lightly flour your work surface and roll out the puff pastry to a thickness of about 5 mm (¼ inch).
✔ Cut the pastry into either 8 cm (3-inch) squares or equal-sized rectangles, depending on the shape you prefer.

✔ You have two shaping options: bring all four corners toward the centre to create a classic envelope-shaped pastry, or fold only two opposite corners over the filling for a more open, elegant look that showcases the filling.

5. Fill the Pastries
✔ Combine the sautéed mushrooms with about one-third of the béchamel sauce until the filling is creamy and well combined.

✔ Spoon a generous tablespoon of the mushroom mixture into the centre of each pastry square. Top with a slice of prosciutto and sprinkle with grated cheese for extra flavour and a delicious golden finish.

6. Finish and Bake
✔ Lightly brush the pastry edges with beaten egg to give them a beautiful golden, glossy finish.

✔ Bake in a preheated oven for 12–15 minutes, or until the pastry is puffed, crisp and beautifully golden brown.
Frequently Asked Questions
Questions | Answer |
Can I prepare these pastry puffs in advance? | Yes. You can assemble the pastry puffs a few hours ahead of time and keep them refrigerated. Bake them just before serving for the best texture and flavour. |
Can I use a different type of cheese? | Absolutely. Emmental, mozzarella, Gruyère, or even mature Cheddar all work beautifully in this recipe. |
Can I substitute the prosciutto? | Yes. Pancetta is an excellent alternative, while crispy bacon adds a slightly smokier flavour. |
Why did my puff pastry turn soggy? | This usually happens if the béchamel sauce is too thin or if the mushrooms haven't been cooked long enough to release their moisture. Make sure both the sauce and the mushroom filling are thick before assembling the pastries. |
Can I reheat the pastry puffs? | Yes. For the best results, reheat them in a preheated oven for a few minutes until crisp and warmed through. Avoid using the microwave, as it will soften the pastry. |
