Fresh Fruit Cream Cheese Parfait
A light, elegant dessert layered with juicy macerated berries and a silky lemon-mint cream cheese filling. Fresh, creamy, and perfectly balanced between sweet and tangy; ideal for a quick make-ahead treat.
Serves: 4 | Prep Time: 20 min | Chill Time: 1 h | Total Time: 1 h 20 min
Ingredients
Fruit layer
360g fresh strawberries or raspberries
2 tbsp vanilla sugar
2 tbsp lemon juice
Cream layer
250g cream cheese (about 1 cup)
80g powdered sugar
1/2 tsp lemon zest, finely grated
2 fresh mint leaves, finely chopped
Method
Wash the berries, drain well, remove stems, and slice if using strawberries.
Place fruit in a bowl with vanilla sugar and lemon juice. Stir gently and let sit for 10 minutes to release juices.
In another bowl, beat cream cheese with powdered sugar until smooth and creamy.
Add lemon zest and finely chopped mint, mixing until fully combined.
Spoon a layer of cream mixture into 4 glasses. Add a layer of macerated fruit. Repeat layers once more, finishing with fruit on top.
Chill for about 1 hour before serving.
Garnish with extra lemon zest and fresh mint leaves.
Bon Appétit!
Notes |
1. Best served well chilled for a firmer texture and cleaner layers
2. You can swap strawberries with raspberries or a mix of both
3. For a lighter version, use whipped cream cheese or Greek yogurt blend
