Easy Strawberry Mousse by Feli Chic'Cuisine

This easy strawberry mousse is the quintessential fresh strawberry dessert. Made with real fruit, whipped cream, and airy egg whites, it captures the vibrant flavor of peak strawberry season in a light, fluffy texture. It’s a no-bake summer dessert that looks elegant but requires minimal effort.

There is nothing quite like the arrival of strawberry season. When the markets are overflowing with bright, ruby-red berries that smell like pure sunshine, my kitchen immediately transforms into a berry workshop. Of all the homemade strawberry desserts I make during these warmer months, this Classic Strawberry Mousse is the one I return to year after year.

The secret to this mousse is its beautiful texture: airy from whipped cream and egg whites, yet creamy enough to feel indulgent. Whether you're hosting a summer dinner party, preparing a romantic dessert, or simply treating yourself, this mousse will never disappoint.

Important Tips for the Best Strawberry Mousse

  • Cold is Key: Ensure your whipping cream and your mixing bowl are very cold before you start. This helps the cream aerate much faster.

  • Folding Technique: Use a figure-eight motion with your spatula. This preserves the tiny air bubbles created by the egg whites and cream—the secret to that "cloud" texture.

  • Use Ripe Berries: Since this is a fresh fruit dessert, the quality of your strawberries is everything. If they aren't sweet enough, feel free to add an extra tablespoon of sugar to the purée.

One note of caution: Because this recipe uses uncooked egg whites, using pasteurized eggs ensures the dessert is safe for everyone.

Recipe Variations & Substitutions

  • Gelatin version: If you want a firmer mousse that can hold its shape longer (good for cake layers or hot summer days), dissolve 1½ teaspoons of unflavored gelatin in 2 tablespoons of warm water and mix into the strawberry purée before folding.

  • Egg-free version: Replace the egg whites with an extra ½ cup of whipped cream for a simpler, egg-free mousse.

  • Make it boozy: Add a tablespoon of Grand Marnier, Chambord, or a splash of champagne to the strawberry purée for an adult twist.

Frequently Asked Questions

Question

Answer

Can I use frozen strawberries?

Yes. Thaw them completely and drain excess liquid first to avoid a watery mousse.

Can I reduce the sugar?

Yes, but keep in mind strawberries vary in sweetness, so adjust gradually and taste as you go.

Can I make this mousse ahead of time?

Absolutely. It’s best made a day in advance and chilled for at least 2 hours or overnight for best texture.

Why do you use egg whites?

Whipped egg whites give the mousse its light, airy, fluffy texture.

Is it safe to eat raw egg whites?

Use pasteurized eggs if possible to reduce any food safety risk.

Can I replace the cream with yogurt?

Yes, Greek yogurt can be used for a tangier, lighter version, but the texture will be less airy.

How do I know when cream is whipped?

It should form soft peaks that hold their shape but still look smooth and creamy.

Can I make it dairy-free?

Yes. Use coconut cream or a plant-based whipping cream alternative for a dairy-free version.

Why add lemon juice?

Lemon enhances the strawberry flavour and balances the sweetness naturally.

How long does strawberry mousse last?

It keeps well in the fridge for up to 2 days, but is best enjoyed fresh for maximum fluffiness.

A Sweet Conclusion

This Easy Strawberry Mousse is more than just a dessert; it’s a celebration of the season and a tribute to the woman who first taught me to love it. It reminds us to slow down, enjoy the fresh produce while it lasts, and indulge in the simple pleasures of life.

Whether you’re serving this at a dinner party or just enjoying a bowl on the porch, I hope it brings a little bit of my mother's summer magic to your table.

Serving: 6
Calories: 295 kcal
Prep Time: 15 min Chill Time: 2-3 hours Total Time: 3 hours

Ingredients

  • 450 g (3 cups) fresh strawberries, sliced

  • 15 g (1 tbsp) lemon juice (from ½ lemon)

  • 63 g (1/3 cup) granulated sugar, divided

  • 4 large egg whites

  • 360 g (1 1/2 cups) whipping cream

Method

  1. Purée the Strawberries: Slice your strawberries and reserve a few for garnish. Place the rest into a blender or food processor with the lemon juice and 2 tablespoons of sugar. Blend until smooth.Optional tip: Strain the purée through a fine mesh sieve to remove seeds for an ultra-smooth mousse.

  2. Whip the Cream: In a chilled bowl, whip the cold cream with 1 tablespoon of sugar until soft peaks form. Be careful not to overwhip—it should look creamy and soft.

  3. Beat the Egg Whites: In a separate clean bowl, beat the egg whites until foamy. Slowly add the remaining 2 tablespoons of sugar while beating until stiff, glossy peaks form.

  4. Fold Everything Together: Using a spatula, gently fold the strawberry purée into the whipped cream until combined. Then gently fold in the beaten egg whites, being careful not to deflate the mixture.

  5. Chill and Serve: Spoon the mousse into serving glasses or ramekins. Refrigerate for at least 2 hours to allow the mousse to firm up.

  6. Serving: Before serving, garnish with reserved strawberry slices or a sprig of mint.

Enjoy!
