Ingredients
For the Sesame Ginger Sauce
5 ½ tbsp soy sauce (about ⅓ cup)
2 ½ tbsp toasted sesame oil
1 ½ tbsp rice vinegar (or fresh lime juice)
1 ½ tbsp honey or brown sugar
1 ½-inch piece fresh ginger, finely grated (about 1 ½ tbsp)
3 garlic cloves, minced
1–1 ½ tsp Sriracha or chilli flakes (optional, for a gentle heat)
For the Stir-Fry
400g soba noodles (approximately 4 standard bundles)
1 ½ cups vegetables of your choice (such as shredded carrots, snap peas, spinach, or sliced bell peppers)
1 tbsp neutral oil, for cooking (if needed)
Toasted sesame seeds, for serving
2–3 spring onions, thinly sliced, for garnish (optional)
Method
1. Prepare the Sauce
In a small bowl, whisk together the soy sauce, toasted sesame oil, rice vinegar, honey (or brown sugar), grated ginger, minced garlic, and Sriracha or chilli flakes, if using. Set aside.
2. Cook the Soba Noodles
Bring a large pot of water to a rolling boil. Add the soba noodles and cook according to the package instructions, usually for 3–5 minutes.
Drain immediately and rinse thoroughly under cold running water. Gently rub the noodles between your hands while rinsing to remove excess starch. Drain well and set aside.
3. Stir-Fry the Vegetables
Heat a large skillet, wok, or deep sauté pan over medium-high heat. Add a small splash of neutral oil, then stir-fry the vegetables for 2–3 minutes until they are bright in colour and still slightly crisp.
4. Add the Sauce
Pour the sesame ginger sauce into the pan with the vegetables. Allow it to gently simmer for about 30 seconds, just until the garlic and ginger become fragrant and the honey melts into the sauce.
5. Toss Everything Together
Add the drained soba noodles to the pan. Using tongs or chopsticks, toss everything together for 1–2 minutes until the noodles are evenly coated and warmed through.
6. Serve
