Here is nothing better than a semolina dumpling soup made from chicken stock. Diet friendly and very filling, this semolina dumpling soup is a must-try!
2 - 2,5 l chicken stock
1 cup semolina
1 pinch of freshly grated nutmeg
1 pinch salt
fresh ground pepper
chives, chopped, to garnish
1. Beat the eggs until foamy, stir in the semolina, season with salt, pepper and freshly grated nutmeg to taste. Mix well and let rest for 10 minutes.
2. Heat on high and bring to boil the chicken stock. Taste for seasoning and adjust. Reduce heat.
3. Shape dumplings with spoon and put them into boiling soup. Simmer over low heat for about 8-10 minutes.
4. Serve the soup sprinkled with chives and grated nutmeg, if desired.
