The ground almond layer is my favourite for this plum galette because it adds a delicate nutty flavour while absorbing the fruit juices. However, if you prefer a nut-free version or simply don't have almonds on hand, you can easily replace it with another moisture-absorbing layer.
Try one of these simple alternatives:
Fine semolina or cornmeal – Use 2 tablespoons. A traditional French baking trick that helps absorb excess juice while keeping the pastry crisp.
Crushed cookies – Use 3 tablespoons of crushed vanilla wafers, shortbread biscuits, or graham crackers for a subtle sweetness.
Fine breadcrumbs – Use 2 tablespoons of plain, unflavoured breadcrumbs mixed with 1 teaspoon of sugar. They disappear into the filling as the galette bakes.
Flour or cornstarch – Sprinkle 1 tablespoon of flour or 2 teaspoons of cornstarch mixed with the sugar over the pastry base.
Whichever option you choose, leave a small border around the edges and avoid adding too thick a layer. The goal is simply to protect the pastry while allowing the flavour of the plums to shine.

How to make Rustic Plum Galette
Step 1 — Make the pastry
✔ In a large bowl, mix the flour, powdered sugar, and salt.
✔ Add the cold cubed butter and rub it into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
✔ Add the egg yolk and gently bring the dough together. If necessary, add a tablespoon of cold water.
✔ Shape into a disc, wrap in parchement paper, and chill in the fridge for at least 30 minutes.
Step 2 — Prepare the filling
✔ Preheat the oven to 190°C (375°F).
✔ Pit the plums and cut them into thin wedges.
✔ Mix the ground almonds with one tablespoon of sugar.
Step 3 — Roll the pastry
✔ Roll the chilled dough between two sheets of parchment paper until you have a circle approximately 30 cm (12 inches) wide. The parchment prevents sticking and makes it easier to transfer the pastry to the baking sheet
✔ Don't worry if the edges aren't perfectly round; the rustic shape is part of its charm.
✔ But, if you prefer a uniform circle, use an upside-down tart tin as a guide and trim the pastry before adding the filling.

✔ Fold the pastry border gently over the outer edge of the fruit, pleating as you go.

200g all-purpose flour
80g unsalted butter (cold, cut into small cubes)

1 large egg yolk

600g to 700g fresh plums (about 8–10 plums, pitted and cut into thin wedges)
3 tbsp ground almonds (almond flour/meal)
2 tbsp granulated sugar
15g cold butter

Method
Prepare the Sweet Pastry:
In a large bowl, mix flour, powdered sugar, and salt. Rub in the cold cubed butter using your fingertips until coarse crumbs form. Add the egg yolk (and, a splash of cold water if the dough is too dry). Bring the dough together. Wrap in parchment paper and chill in the fridge for at least 30 minutes.
Prep Plums & Almond Sugar:
Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper. Slice plums into thin wedges. In a small bowl, combine 3 tbsp ground almonds with 1 tbsp granulated sugar.
Roll & Layer:
Roll out chilled dough on parchment into a ~30cm circle. Sprinkle the almond-sugar mixture evenly in the center, leaving a 5cm clear border around the edges.
Arrange & Fold:
Arrange plum wedges cut-side up over the almond base. Gently fold dough edges up over the outer fruit, overlapping slightly for a classic rustic edge.
Bake to Perfection:
Dot plums with tiny butter pieces. Sprinkle remaining 1 tbsp sugar over fruit and crust. Brush dough with milk or egg wash. Bake for 35–40 mins until golden and bubbling.
