The delicious flavors of these easy mini-pizzas are hard to beat!
1 loaf crusty Italian bread, sliced
2 Tbsp olive oil
salt and freshly ground black pepper
1 Tbsp olive oil
1 red bell pepper, sliced and roasted
1 yellow pepper, sliced and roasted
6 slices prosciutto
200g mozzarella cheese, shredded
1. Cut the bread into slices. Brush slices with olive oil and season with salt and pepper.
2. Cut the pepper into thick strips. Add 1 tbsp olive oil in the skillet, and sauté them for 1-2 minutes or until tender.
3. Add a layer of shredded cheese on each loaf bread. Top with pepper strips, prosciutto and shredded cheese. Bake for 5 minutes, until the cheese is bubbling. Serve immediately.
