A great recipe of classic omelet filled with red pepper, cheese and black olive.
3 Tbsp milk
1 tsp olive oil
1 red pepper, sliced
1/3 cups pitted black olives, cut in half
125g (4 oz) cheese shredded
salt and freshly ground black pepper
1. In a bowl crack the eggs, add the salt, black pepper and bland with a wire whisk.
2. Meanwhile, in a skillet heat 1 Tbsp olive oil and add the red pepper sliced, and the olive and cook for 1 minute. Pour the eggs mixture.
3. Shake pan gently to loosen any egg or filling from edge, then slide omelet to edge of skillet. Lift up the far edge of the pan and snap it back toward you.
4. Using a spatula turn over the omelet and cook for 30 seconds. Slide the omelet onto a plate and serve immediately!
