This is a lovely creamy french homestyle soup, that's rich, creamy and ultra-smooth. A farmhouse vegetable soup that makes a hearty meal on its own.
500g potatoes, peeled and cubed
4 slices smoked bacon
3 cloves garlic, peeled and crushed
1 onion, sliced
2-3 tsp olive oil
1 litre vegetable stock
2 chicken bouillon cube
200 ml Crème fraîche
salt to taste
freshly ground pepper
1. Heat the olive oil into a saucepan, over medium heat. Add the onion, garlic and bacon; cook for 5 minutes or until tender, stirring frequently.
2. Add the potatoes, chicken, bouillon cubes, vegetables stock, salt and fresh pepper. Cover and simmer for 20 - 25 minutes, until tender.
3. Add Crème fraîche stirring with a wooden spoon. Remove from the heat and add chopped parsley.
4. Spoon into four large warmed bowls and serve with bacon.
