Lemon soy sauce chicken an easy and versatile option for a healthy dinner.
400g chicken breast, without skin, cubed
1 tsp olive oil
160 ml lemon juice
2 Tbsp soy sauce
1 1/2 Tbsp cornstarch
1. In a large bowl, mix the lemon juice, and the soy sauce. Add the cornstarch and mix well. Add the chicken cubed and coat. Cover and marinate for 15 minutes.
2. In a large nonstick pan heat the oil and add the marinade chicken. Cook the chicken with the marinade for 10-12 minutes or until lightly browned.
3 Arrange chicken on a serving platter. Stir sauce and pour over chicken. Sprinkle scallion, chopped.
