Mango, Avocado and Tomatoes Salad

This salad is packed with fresh flavors, including creamy avocado, sweet mango and sour-juicy cherry tomatoes.

Fresh, healthy, fast and filing, this salad makes a great supper or snack. You will love this Avocado Mango Salad!

Ingredients

  • 2 mangoes, sliced

  • 2 avocados, sliced

  • 8 cherry tomatoes, cut in half

  • 1/2 small red onion, finely sliced

  • lettuce leaves (optional)

  • salt and freshly ground black pepper

For the Dressing

  • 2 Tbsp olive oil

  • 1 Tbsp white whine vinegar

  • 1 tsp citron juice

  • 1 garlic clove

  • 2 tsp coriander, fresh leaves


Method

​1. Make the dressing by combining all the ingredients in a small bowl; whisk well.

​2. Toss the mangoes, avocado, tomatoes and onion in a serving bowl. Lightly season with salt and pepper, then toss with the dressing. Serve with lettuce leaves.
