Fresh Fruit Cream Cheese Parfait

The No-Bake Cream Cheese Parfait with fresh strawberries or your favorite summer fruits is delicious, easy to prepare, looks incredibly elegant, and the best part is that you don't need an oven. This Parfait is the perfect dessert for the summer. Every spoonful of cream cheese and tangy fresh fruit is a masterpiece of flavor.

This dessert is ideal for sharing with friends, especially in the summer! You'll certainly enjoy it!

Every summer I like to prepare this dessert with fresh fruit, especially strawberries that have a delightful aroma and perfectly complement the cream cheese.

Strawberry and raspberries are my favorites for this kind of parfait, but you can use any fruit that you like.

A quick, easy, and delicious dessert! This Parfait is great with a hint of lemon zest and fresh mint!


Prep Time: 15 min

Serves: 4


Ingredients

  • 360g (3 cups) fresh strawberries or raspberries

  • 2 Tbsp vanilla sugar

  • 2 Tbsp lemon juice

  • 250g (1/2 cup) cream cheese

  • 80g (1/2 cup) powdered sugar

  • 1/2 tsp lemon zest, finely grated​ (BIO)

  • 2 fresh mint leaves, finely chopped


Method

1. Wash the strawberries, drain them well, cut the stalks and slice them. In a large bowl, place the fruits, add the vanilla sugar and lemon juice. Gently, stir to combine, then let this sit for 10 minutes.
 

 
2. In another bowl, using a wooden spoon, cream together the cream cheese and powdered sugar, until smooth. Add lemon zest and mint; stir to combine.
 

 
3. Prepare 4 parfait glasses. Place a few spoonfuls of the cheesecake mixture into the bottom of a glass. Top that with a layer of the macerated strawberries, then repeat with one more of cream cheese layer and top with strawberries.


 
4. Chill the parfaits for about an hour in the refrigerator. Before serving, sprinkle with lemon zest and garnish with fresh meant leaves.
