Ingredients

  • 3 very ripe bananas, peeled and 1 extra banana

  • 75 g (1/3 cup) butter, unsalted or salted, melted

  • 1/2 teaspoon baking soda (not baking powder)

  • 100-150g (3/4 cup) sugar (1/2 cup if you would like it less sweet; 1 cup if more sweet)

  • 1 large egg, beaten

  • 1 teaspoon vanilla extract

  • 200g (1 1/2 cups) all-purpose flour


Method

Preheat and Prep: Start by preheating your oven to 350°F (175°C (160°C Fan) / 4 gas mark) and greasing or line with baking paper a 9x5-inch (23x13 cm) loaf pan. A well-prepped pan ensures easy release and a beautifully shaped loaf.

Banana Bliss: In a mixing bowl, mash the overripe bananas with a fork until they reach a smooth consistency. The more ripe the bananas, the sweeter and more flavorful your bread will be.

Mix in the wet ingredients: Incorporate the melted butter into the mashed bananas, followed by the granulated sugar, beaten egg, and vanilla extract. Blend until all the ingredients are well combined.

The Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking soda. Gradually add the dry ingredients to your banana mixture, stirring just until they're incorporated. Be gentle and don't overmix; a few lumps are perfectly fine. Fold in chopped almonds, flaky almonds, chopped nuts or chocolate chips (optional). These additions add delightful texture and flavor.

Prepare for Baking: Pour the batter into the prepared loaf pan, spreading it evenly. Halve the remaining banana lengthwise and press into the top of the batter. Sprinkle the top with flaked almonds or chopped nuts (optional) and 1 teaspoon of brown sugar.
